Sheet-Pan Balsamic-Glazed Chicken with Roasted Mushrooms & Baby Spinach

- 4 pieces boneless, skinless chicken breasts
- 3 cups cremini mushrooms, halved
- 4 cups baby spinach
- 3 tbsp balsamic vinegar
- 3 tbsp olive oil
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tsp dried Italian seasoning
- 1 tsp salt
- 0.5 tsp black pepper

Instructions
Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper or foil.
🌡️ 425°FIn a small bowl, whisk together balsamic vinegar, olive oil, honey, garlic, Italian seasoning, salt, and pepper to make the glaze.
⏱️ 2 minutesPlace chicken breasts and mushrooms on the prepared sheet pan. Brush chicken with half of the balsamic glaze and toss mushrooms with a bit of the glaze.
