- 2 lbs beef chuck roast
- 1 medium yellow onion, sliced
- 4 cloves garlic cloves, minced
- 1 tsp ground allspice
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1.5 tsp sea salt
- 0.5 tsp black pepper
- 4 sprigs fresh thyme sprigs
- 0.5 cup orange juice
- 1 cup beef broth (gluten-free)
- 3 large green plantains
- 3 tbsp avocado oil (for brushing)
- 0.25 cup fresh cilantro, chopped
- 1 large lime, juiced
- 0.25 cup red onion, minced
- 1 small jalapeño, minced

Place beef chuck roast, sliced onion, minced garlic, allspice, smoked paprika, cumin, salt, pepper, and thyme sprigs into a slow-cooker. Pour in orange juice and beef broth. Cover and cook on low for 7 hours, or until the beef is very tender and shreds easily.
