- 2 cups cooked brown or green lentils (well-drained)
- 0.5 cup rolled oats
- 0.5 cup finely chopped red onion
- 0.25 cup chopped fresh parsley
- 0.25 cup chopped fresh cilantro
- 2 cloves minced garlic
- 1 tsp ground cumin
- 0.5 tsp smoked paprika
- 0.75 tsp salt
- 0.25 tsp black pepper
- 3 tbsp olive oil, divided
- 1.5 cups ripe tomatoes, diced
- 1 tbsp chopped red chili (or 1/2 tsp chili flakes)
- 1 tsp maple syrup
- 1 tbsp lemon juice

In a large bowl, mash lentils with a fork or potato masher until mostly broken down. Stir in oats, red onion, parsley, cilantro, garlic, cumin, smoked paprika, salt, and black pepper until well combined.
