One-Pot Sweet Chili Beef & Broccoli Stir-Fry with Jasmine Rice

- 12 oz plant-based beef crumbles
- 1 cup uncooked jasmine rice
- 3 cups broccoli florets
- 1/3 cup sweet chili sauce
- 2 tbsp low-sodium soy sauce
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1 tbsp sesame oil
- 2 cups water or vegetable broth
- 2 tbsp scallions, sliced
- 1 tsp sesame seeds

Heat sesame oil in a large pot over medium-high heat. Add garlic and ginger; sauté for 30 seconds until fragrant.
Add plant-based beef crumbles and cook, stirring, for 2 minutes until slightly browned.
