- 4 each (about 5 oz) tilapia fillets
- 2 cups sweet potato, diced
- 1 cup red bell pepper, diced
- 1 cup yellow bell pepper, diced
- 3 tbsp olive oil
- 2 tbsp Cajun seasoning
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 tbsp fresh parsley, chopped
- 4 each lemon wedges

Preheat the air fryer to 400°F. In a bowl, toss diced sweet potato and bell peppers with 2 tbsp olive oil, half the Cajun seasoning, salt, and black pepper.
