- 4 4-oz fillets white fish fillets (such as cod or tilapia)
- 2 cups eggplant, diced
- 1.5 cups cherry tomatoes, halved
- 3 tbsp olive oil
- 2 tbsp za’atar seasoning
- 1 whole lemon, sliced
- 0.5 tsp salt
- 0.25 tsp black pepper
- 2 tbsp fresh parsley, chopped (optional)

Preheat your air fryer to 400°F. In a bowl, toss diced eggplant and cherry tomatoes with 2 tbsp olive oil, 1 tbsp za’atar, salt, and black pepper.
