- 1 lb beef sirloin, thinly sliced
- 2 cups snap peas, trimmed
- 4 cups cauliflower rice
- 2 tbsp avocado oil
- 3 tbsp soy sauce (or coconut aminos for strict keto)
- 2 tsp erythritol or monk fruit sweetener
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tsp sesame oil
- 2 tbsp green onions, sliced
- 1 tsp sesame seeds (optional)

Heat avocado oil in a large skillet or wok over medium-high heat. Add sliced beef, season with salt & pepper, and stir-fry until browned and just cooked through, about 3 minutes.
