- 4 4-oz pieces haddock fillets
- 2 tsp sumac
- 2 cups carrots, sliced
- 1 cup fennel bulb, sliced
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- 2 cloves garlic, minced
- 1 tsp sea salt
- 0.5 tsp black pepper
- 2 tbsp fresh parsley, chopped

Preheat slow-cooker on HIGH with the lid on. Toss carrots and fennel with 1 tablespoon olive oil, half the salt, pepper, and garlic. Spread evenly on the bottom of the slow-cooker insert.
⏱️ 1 minutePat haddock fillets dry and rub with remaining olive oil, sumac, the rest of the salt, and a squeeze of lemon juice. Lay fillets on top of vegetables.
