- 4 pieces trout fillets (skin-on, about 5 oz each)
- 1/3 cup white sesame seeds
- 2 tbsp black sesame seeds
- 1 large egg
- 1 cup radishes, thinly sliced
- 3 tbsp rice vinegar (unseasoned)
- 1/2 tsp erythritol or keto-friendly sweetener
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp fresh lime juice
- 1 tsp sesame oil
- 1 as needed olive oil spray
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 2 tbsp fresh cilantro or scallions (to garnish)

In a small bowl, combine sliced radishes, rice vinegar, erythritol, and a pinch of salt. Toss and set aside to quick-pickle.
Pat trout fillets dry and season both sides with salt and pepper. Beat egg in a shallow dish. Mix white and black sesame seeds in another dish.
Dip each fillet in egg, then press firmly into the sesame seed mixture to coat one side well.
Lightly spray air-fryer basket with olive oil. Place trout fillets, sesame-side up, in the basket. Spray tops lightly with olive oil.
Air-fry at 400°F for 7–9 minutes or until fish flakes easily and sesame crust is golden.
